In celebration of being named *Spanish Capital of Gastronomy 2025, the city is preparing something special (and tasty): the largest coca de mollitas in the world! And we, Poles in Spain, can't miss it.
But... what exactly is coca de mollitas?
This is one of the most distinctive dishes of the Alicante region. Coca de mollitas is a type of salty cake - something between a shortcrust pastry and a pizza - covered with a crunchy crumble made of flour, oil and salt. Sound simple? And good, because in that simplicity lies all the culinary beauty. It's a local classic that Alicantinos have loved for generations - perfect for breakfast, a snack or even a glass of wine.
Some people add tuna to it, others olives, but it's always about the same thing: that special crunchy, slightly oily top - mollitas - that falls apart in your fingers and disappears from your plate faster than a selfie with a palm tree.
