If you want to make your muffin even fluffier and softer, add 50 g of potato flour. It's a simple trick that will give the cake a velvety texture!
Engredients:
- 3 eggs
- 150 g sugar
- 150 g wheat flour
- 50 g of potato flour
- 100 g butter
- 120 ml of milk
- 1 teaspoon baking powder
- Peel grated from 1 lemon
- Juice of half a lemon
- Seeds from 1 vanilla bean stick or 1 teaspoon vanilla extract
- A pinch of salt
Preparation:
- Melt butter in a saucepan, add lemon juice and zest to it. Set aside to cool.
- Beat eggs with sugar and vanilla until light and fluffy. This will make the muffin light and tender.
- Add sifted whole wheat flour, potato flour, baking powder and salt. Mix gently so as not to destroy the structure of the dough.
- Pour in the lemon butter and milk, thoroughly but gently combine the ingredients.
- Prepare a muffin tin - grease it with butter and dust it with flour.
- Bake at 170°C for about 45 minutes (until a dry stick).
- After cooling, pour lemon frosting (powdered sugar + lemon juice) over the cupcake.
