Spanish potato tortilla, also known as tortilla española, is a classic Spanish dish that has won acclaim around the world. The main ingredients are potatoes, eggs and salt. Despite the simplicity of the ingredients, this dish is a true icon of Spanish cuisine.

To prepare a potato tortilla, the potatoes are cut into thin slices and fried until golden brown in a large pot of oil. They are then mixed with eggs, and the whole mixture is fried in a pan until the outside is crispy and the inside is soft.

The issue of adding onions is a matter of controversy among lovers of this dishes. Many people prefer the traditional version without onions, while others believe that onions add flavor and texture.

These differences are a source of debate and local culinary traditions, and there are also different variations of this dish in different regions of Spain. Some add parsley, chorizo sausage or other regional spices to it, which gives it a unique flavor and character.

Some prefer a potato tortilla with a more liquid consistency, while others prefer it well-baked.Potato tortillas are usually served as a snack in the form of tapas or as a sandwich, and are often accompanied by a sautéed peppers and coarse salt.

It is worth noting that the preparation of a perfect potato tortilla requires not only culinary skill, but also an understanding of the subtle nuances of flavor and texture that make this dish unique. Whether with or without onions, the Spanish potato tortilla remains a key component of a culinary journey through this fascinating country.

Ingredients:

- 4 large potatoes
- 1 large onion
- 6 eggs
- Salt, pepper to taste
- 2 cups olive oil with olives (for frying)

Instructions:

Preparing the Ingredients:
Peel the potatoes, then cut them into thin slices or chunks. Peel the onion and chop it into thin peaks.

Frying the Potatoes and Onions:
In a large pot or skillet over medium heat, heat the olive oil. Add the sliced potatoes and fry, stirring occasionally, until they are soft and slightly golden. This can take about 10-15 minutes. Add the chopped onions and continue frying until the onions are soft and translucent. Season with salt and pepper to taste.

Preparing the Eggs:
In a bowl, whisk the eggs. Add salt and pepper to them, stir.

Combining Ingredients:
Drain the potatoes and onions of excess oil, leaving about 2 tablespoons of oil in the pot. Add the fried potatoes and onions to the eggs. Gently mix so that the ingredients are evenly distributed.

Frying Tortillas:
Over medium heat, heat the remaining olive oil. Pour the egg mixture with the potatoes and onions into the skillet. Fry over medium heat until the edges are seared and the center is still slightly moist. This will take about 5 minutes.

Flipping the Tortilla:
To flip the tortilla, use a plate about the diameter of the pan. Place the plate on top of the tortilla, cover the pan, and invert the plate and pan together.Gently slide the tortilla back onto the pan to finish frying the other side. Fry for about 3-4 more minutes.

Serving:
When the tortilla is ready, transfer it to a plate. You can serve it warm or at room temperature, cut into pieces. Tortilla de patatas will be perfect as a main course or as a snack at family gatherings.
